CrockPot Pineapple Pork Loin

Ingredients

3 pound pork loin, trimmed and defatted

2 tablespoons olive oil

1 teaspoon of salt

1 teaspoon black pepper

8 garlic cloves, freshly minced

¼ cup soy sauce

1 large can of pineapple chunks, with juice

½ cup light brown sugar

Instructions

In a skillet over medium-high heat, add the olive oil and sear the pork loin for 2 to 3 minutes on each side

Place the pork loin in the slow cooker

Rub the pork loin with the minced garlic

Add the soy sauce and the can of pineapple chunks, as well as the juice

Sprinkle the brown sugar on top of the pork loin

Place the lid on the slow cooker and cook on low heat for 4 to 6 hours. This will give you an easy-to-slice and tender pork loin.
