Cooked, tasty ground beef is placed into a ripe avocado, which is then topped with chopped tomatoes, cheese, and shredded lettuce. Tacos with a healthy twist!
Ingredients
- 4 large pitted and halved avocados (peel on)
- 1/2 cup sour cream (full fat)
- 1 tablespoon lime juice
- 3/4 a teaspoon of salt, divided
- 1 tbsp extra-virgin olive oil
- 1/2 cup red bell pepper, diced
- 1/4 cup white onion, diced
- 1/2 lb lean ground beef
- 1/4 cup salsa (prepared)
- 2 tsp cumin powder
- 1 teaspoon chile powder
- 1/2 cup cheddar cheese, shredded
- 1/4 cup fresh cilantro, chopped
Directions
- Scoop off 2 to 3 tablespoons of flesh from the bottom of every avocado half, keeping the rest of the flesh intact.
- In a food processor, combine the excised meat, sour cream, lime juice, and 14 tsp salt. Purée until completely smooth, then put aside.

- Heat the oil in a medium skillet over medium heat. Sauté for 3 minutes with the bell pepper and onion.
- Cook for 8 minutes, breaking up the meat with a spoon while it cooks.
- Toss in the salsa, cumin, chili powder, and the remaining 1/2 teaspoon salt.
- Cook again for 3 minutes, or until well cooked.
- Stir in cheese.
- Fill avocado halves with filling and drizzle with a combination of avocado and sour cream. cilantro on top
