POTATO PANCAKES

Ingredients:

2 cups leftover mashed potatoes

1/4 cup flour

1/4 cup milk

1 beaten egg

1 tablespoon chopped onion

1 tablespoon chopped green pepper

Bacon fat or cooking oil

Salt and pepper to taste (optional)

Instructions:

In a bowl, mix the mashed potatoes, flour, milk, egg, onion and green pepper. Season with salt and pepper if necessary.

Form the mixture into 3-inch round patties.

Heat bacon fat or cooking oil in a frying pan.

Fry the burgers until golden brown on both sides.Drain the pancakes on kitchen paper and serve hot.
