Twice Baked Potatoes

Ingredients:

– 4 large russet potatoes
– 3 tablespoons butter, softened
– ½ cup heavy cream or milk 
– ½ cup grated white cheddar cheese
– 1 egg yolk
– Salt and pepper to taste

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Scrub the potatoes thoroughly to remove any dirt. Pat them dry with a 
clean towel.

3. Place the russet potatoes in the oven and let them roast for about 60 minutes.

4. After baking, hollow out the potatoes. Prepare the stuffing by mixing together the remaining ingredients in a bowl along with the hollowed out potatoes. Fill potato skins with the prepared stuffing.

Optional: This step can be customized as you see fit (i.e. adding bacon bits, etc). 

5. Return the stuffed potatoes to the oven and allow them to get a golden-brown hue for another 20-30 minutes. Garnish potatoes as desired. Chopped onions work great! 

Serve the Twice Baked Potatoes as a side dish alongside your choice of proteins or as a main course with a salad or steamed vegetables.
