Ingredients
16 ounces spaghetti, cooked according to package directions
12 thick slices applewood smoked bacon
2 tablespoons olive oil
1 onion, finely chopped
2 cloves of garlic, freshly minced
¼ cup dry vermouth
1 cup parmesan cheese, freshly grated
½ cup whipped cream
4 large eggs, beaten
1 tablespoon ground black pepper
Instructions
Boil pasta according to package instructions
Place a skillet over medium-high heat and sauté the bacon until crisp
Place the bacon on a plate lined with paper towel
Reserve 2 tablespoons of bacon grease and discard the rest
Cut the bacon into small pieces
Add the onions and 1 tablespoon of olive oil to the pan with the bacon fat
Cook the onion for 5 minutes, until translucent
Add the garlic and cook for 1 minute
Add Vermouth and let boil
Add chopped bacon and stir well
Place the spaghetti in a bowl and drizzle with olive oil
Place the bacon and onion mixture on top of the pasta
In a bowl, combine the eggs, parmesan, whipped cream and black pepper
Stir until well mixed
