Ingredients
1 pound ground beef, lean
1 teaspoon of salt
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
1 pound small red potatoes, washed and halved
3 carrots, sliced or diced
½ white onion, sliced
2 tablespoons olive oil
1 tablespoon Italian seasoning
1 cup Colby Jack cheese, finely grated
Instructions
Cut 4 large sheets of heavy duty aluminum foil
In a medium bowl, combine the ground beef, garlic powder, salt, pepper, and onion powder and toss to combine well
Shape the meat into 4 equal sized patties and place them in the center of the foil sheet
In a medium bowl, add the cut potatoes, sliced or diced carrots, minced onion, olive oil and Italian seasoning
Mix well to coat all the ingredients
Divide the potatoes and carrots evenly between the four packets
Bring the sides of the foil up and roll the edges together
Flatten the ends and roll the two edges together
Place the packets on a medium hot grill or on the embers at the sides of a campfire
Cook for 45 minutes and test the potatoes, if necessary, close the package and cook for another 15 minutes or until the potatoes are tender.
When done, open the package and top with ½ cup of cheese on top of the meat patty.
