Ingredients
2 large eggs
1 ½ teaspoon vanilla extract
⅓ cup light brown sugar
⅔ cup granulated sugar
1 teaspoon ground cinnamon
½ cup butter, unsalted, softened
1 ½ cup flour
1 ¾ teaspoon baking powder
½ cup whole milk
1 large Granny Smith apple, peeled and diced
1 tablespoon granulated sugar
1 tablespoon ground cinnamon
Icing:
1 cup icing sugar
¼ cup of milk
Instructions
Preheat the oven to 350*
In a small bowl, combine the cinnamon and brown sugar
Grease a 9 inch loaf pan with nonstick spray
Add butter and sugar to a bowl and beat until smooth
Add the eggs one at a time, beating after each addition.
Add in the vanilla extraction another bowl mix the flour and the baking powder then gradually add it to the butter mixture
Add the milk and mix until smooth
Pour half of this batter into the prepared loaf pan
Place half of the apples on the dough
Sprinkle with half of the brown sugar and cinnamon mixture
Lightly press the apples into the batter
Pour remaining batter over apple layer, top with remaining apples and brown sugar mixture
Using a knife, swirl the brown sugar mixture into the apples
Bake for 40 to 50 minutes, when a toothpick comes out clean, the bread is cooked
Take the bread out of the oven, let it rest for 10 minutes.
Unmold the bread on a wire rack
In a small bowl, combine the icing sugar and milk, make sure to remove all lumps
Drizzle glaze over top of apple fritter bread
