Ingredients
2 chicken breasts, halved lengthwise
8 ounces of mushrooms
½ cup green onions, chopped
3 tablespoons of olive oil
2 teaspoons garlic powder
1 teaspoon of salt
½ teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons white cooking wine
¾ cup milk, reduced fat
Instructions
Season the chicken breast with salt, pepper and garlic powder
Add 2 tablespoons of olive oil to a pan and place the chicken breasts in the pan
Cook over medium heat until chicken is cooked through
Remove the chicken and set aside
Put the green onions and mushrooms in the pan with the rest of the olive oil
Sauté until softened
Reduce heat to medium
Stir in cornstarch and stir until smooth
Moisten with cooking wine and cook for a few minutes
Slowly add the reduced fat milk and simmer until it thickens
To serve, pour sauce over chicken and garnish with parsley
