CHARRED CORN SALAD

TOTAL TIME: 35 MINUTES • SERVES 8

Corn is one of the world’s most popular cereal grains and a good source of vitamins such as B6, folate, and potassium. A little char on these cobs is an epic addition to this salad.

INGREDIENTS :

  • 1/2 small red onion, finely chopped
  • 1 red chile, seeded and chopped
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • Kosher salt
  • Black pepper
  • 6 ears corn, shucked
  • 3/4 cup cilantro, chopped
  • 3 ounces queso fresco, crumbled

Directions :

  1. Heat grill on medium. In a bowl, toss red onion, chile, lime juice, oil, and ½ teaspoon each salt and pepper.
  1. Grill corn, turning occasionally, until charred, 10 to 12 minutes. Let cool, then cut corn from cobs.
  2. Add to onion mixture and toss to combine. Fold in cilantro and queso fresco.
