Ingredients
¾ cup buttermilk
2 tablespoons buttermilk for brushing cookies
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon baking soda
1 teaspoon of salt
7 tablespoons butter, chilled in the freezer and cut into thin slices
Instructions
Preheat oven to 425*
Line a baking sheet with parchment paper
Combine baking soda, baking powder, flour and salt with a whisk
Using a cookie cutter, cut the butter into the flour mixture. It should resemble coarse crumbs in about 5 minutes.
Make a well in the center of this mixture and pour in ¾ cup buttermilk, stir until just combined
Lightly flour the counter and place the dough on the flour
Using your hands, pat in a rectangle
Fold this rectangle in thirds
Turn the dough half a turn
Tap again in a rectangle.
Repeat steps 8, 9, 10 two more times
Roll the dough to half an inch thick
Cut out 12 cookies using a 2 ½ inch cookie cutter, do not bend the cookie cutter. Push it in and pull it out immediately
Place the cookies on the baking sheet
Using your thumb, make an indentation on the top of each cookie
Brush tops of cookies with buttermilk
Bake for about 15 minutes.
Serve hot
