I’m not sure what “forgotten chicken” means, having done this a few times I’m sure the name refers to the fact that you just threw everything in the pot and forgot about it! Trust me when I tell you that you won’t find an easier and tastier recipe. Almost no prep work required other than opening boxes.
INGREDIENTS:
- 1 lb boneless, skinless chicken breasts.
- 2 cups minute rice (I used brown rice).
- 1 box of cream of mushroom soup.
- 1 can of chicken cream.
- 1 can of water (use one of the cans of soup).
- 1 tbsp. butter.
- 1 envelope Lipton Onion Soup Mix.
DIRECTIONS:
- Preheat the oven to 350F
- Grease a 9×13″ casserole dish
- In a medium-sized bowl, combine the cream of mushroom soup, cream of chicken, instant rice and a can of water.
- Mix well and pour into the prepared casserole dish. Arrange the chicken breasts over the rice mixture.
- Sprinkle Lipton Onion Soup Mix evenly over chicken breasts
- Cover the dish with aluminum foil and bake for 45 to 50 minutes or until the chicken is cooked through.
Tips and tricks:

- Make sure the chicken breasts are about the same size. To ensure proper cooking.
- Remove the foil during the last 5 minutes of cooking if you feel the rice is completely cooked and you still have some liquid left.
This whole recipe should be a complete meal, either a salad or steamed vegetables. If you want to cut calories, steam broccoli florets and carrot slices and you’re good to go!
