Ingredients
5 potatoes, white or Yukon Gold
5 pork chops
1 onion sliced or diced
1 cup whole milk
3 cups cheddar cheese, grated
3 tablespoons butter, unsalted
Salt and pepper to taste
Optional: I add chives or scallions, a pinch of seasoning salt and a pinch of garlic salt to enhance the bland flavor
Instructions
Peel and slice the potatoes, no more than ¼ inch each slice
Peel and cut the onion into quarters, cut each quarter in half
Use a block of Cheddar cheese, grate it fresh
Preheat the oven to 350*
Spray a baking dish
In a large bowl, combine the potatoes, onions, cheese and milk, I also add the seasonings at this time
Mix everything to mix well
Pour this mixture into the prepared pan
Cut the butter into equal slices and spoon over the potato mixture
Place the pork chops on the cheese and potato mixture
Bake 50 to 55 minutes at 350*
Halfway through cooking, turn the pork chops
Check the pork to make sure it is no longer pink, if so continue cooking for another 15 minutes.
Prick the potatoes with a fork to check their tenderness. If they also need more time, cover the baking dish with aluminum foil to prevent the meat from drying out.
