Meatballs stuffed with baked mozzarella

°1 onion, grated
°12 c fresh chopped parsley
°2/3 c parmesan cheese
°1/3 c Italian rusk
°1 egg
°2 tsp marinara sauce + 1/3 cup
°3 cloves mince garlic
°Pinch of crush red pepper
°Salt and pepper to taste
°1 pack ground beef (1.5-2 pounds)
°16 cube mozzarella cheese (1/2 inch cubes)
Place the oven rack in the lower third of the oven. Heat the oven to 400 degrees. In a large bowl, combine onion, parsley, parmesan cheese, bread crumbs, eggs, marinara, garlic, red pepper flakes, salt, and pepper. Once mixed, add the beef and mix with your hands. Shape the meat mixture into 16 balls.
Make a hole in the center of each meatball and place a cube of mozzarella cheese inside. Fix the meatballs until the cheese is completely hidden. Pour 1/3 cup of the marinara into the bottom of a baking dish. Place the meatballs inside and drizzle with a little extra virgin olive oil. Bake for 15 minutes until fully cooked.
