Dark Mocha Crinkle Cookies

Ingredients

1 cup butter, at room temperature and unsalted

¾ cup dark brown sugar

¼ granulated sugar

¼ cup instant coffee

2 tsp vanilla

2 cups of flour

2/3 cup unsweetened cocoa

2 large eggs, room temperature

1 tsp baking soda

¼ cup sugar for rolling

Instructions

Preheat the oven to 350*

In a medium bowl, combine the butter, brown sugar, granulated sugar

Beat until well combined and fluffy

Beat in the eggs and the vanilla until it is combined thoroughly

Adding a little at a time, gradually mix in the dry ingredients

Using a small scoop, scoop out one tablespoon of dough and roll it into a ball

Roll the ball into sugar and set on a tray lined with parchment paper

Continue until all dough is used

Using your thumb, make an indent into the center of each ball

Bake for 8 to 10 minutes

Meantime, make a ganache using ½ cup heavy whipping cream and 1 cup chocolate chips.

Microwave at 30 second intervals until chocolate is melted and you stir to combine thoroughly

When cookies are done baking, remove from the oven and fill each center with a spoonful of ganache

Allow to harden before serving with your favorite cup of coffee.
