Ingredients
1 cup butter, at room temperature and unsalted
¾ cup dark brown sugar
¼ granulated sugar
¼ cup instant coffee
2 teaspoons vanilla
2 cups flour
2/3 cup unsweetened cocoa
2 large eggs, room temperature
1 teaspoon baking soda
¼ cup sugar for rolling
Instructions
Preheat the oven to 350*
In a medium bowl, combine the butter, brown sugar, granulated sugar
Beat until well combined and frothy
Beat eggs and vanilla until well blended
Adding a little at a time, gradually incorporate the dry ingredients
Using a small spoon, scoop out a tablespoon of the dough and roll it into a ball
Roll the ball in the sugar and place on a baking sheet lined with parchment paper
Continue until all the batter is used
Using your thumb, make an indentation in the center of each ball
Cook 8 to 10 minutes
Meanwhile, prepare a ganache with ½ cup heavy whipped cream and 1 cup chocolate chips.
Microwave at 30 second intervals until the chocolate is melted and you stir to combine
When cookies are done, remove from oven and top each center with a dollop of ganache
Allow to harden before serving with your favorite cup of coffee.
