Ingredients
1 pound large shrimp, deveined and peeled
1 package of cheese tortellini
1 diced tomato
3 tablespoons of butter
2 basil leaves
2 garlic cloves, minced
1 tablespoon all-purpose flour
½ cup parmesan cheese, grated
½ cup heavy cream
Salt and pepper, (optional)
Instructions
In a skillet, melt the butter
Put the prawns in the butter
Cook, 2 to 4 minutes, until the shrimp are no longer translucent
Add diced tomato, minced garlic, salt and pepper and basil
Stir to combine well
Saute 1 to 2 minutes
Add the flour and stir
Add heavy cream and stir as it thickens
Stir in the parmesan
Add tortellini to cheese and mix well to coat.
Let simmer until heated through.
Garnish with chopped fresh parsley and grated parmesan
