Banana bread from Jamaica

List of items needed:

2 cups of regular flour

Three-fourths of a teaspoon of baking soda.

1/2 teaspoon of salt

1 cup of white sugar

1/4 cup of soft butter

2 big eggs

1 1/2 cups of mashed ripe banana, which is approximately 3 bananas.

1/4 cup of plain low-fat yogurt (or pina colada flavored if preferred!).

3 tablespoons of either dark rum or apple cider

Half a teaspoon of vanilla extract

1/2 cup of shredded sweetened coconut

Spray for cooking

1 tablespoon of shredded sweetened coconut

1/2 cup of icing sugar

1 and a half tablespoons of fresh lime or lemon juice

Heat the oven to 350 degrees.

Put flour into measuring cups without pressing down; even it out with a knife. Mix flour, baking soda, and salt together using a whisk.

Put sugar and butter in a big bowl. Mix them with a mixer on medium speed until they are well combined.

Add one egg at a time, mixing well after each one.

Mix banana, yogurt, rum, and vanilla together until well combined.

Add the flour mixture and mix at a low speed until just combined. Add 1/2 cup of coconut.

Put the batter into a loaf pan (9 x 5 inches) that has been sprayed with cooking spray. Sprinkle 1 tablespoon of coconut on top.

Cook in the oven at 350 degrees for 1 hour or until a toothpick inserted in the middle comes out clean. Let the pan cool for 10 minutes on a rack before removing the baked item from the pan.

Mix powdered sugar and juice together, stirring with a whisk. Pour the mixture over the warm bread.

Let it cool completely on a metal rack.
