Easy Sausage Muffins

Ingredients:

  • 1 pound ground sausage
  • 1 cup shredded cheddar cheese
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 cup vegetable oil

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. Cook the sausage: In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain any excess fat and set the sausage aside to cool slightly.
  3. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Mix wet ingredients: In another bowl, beat the eggs, then add the milk and vegetable oil, mixing well.
  5. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Add sausage and cheese: Fold in the cooked sausage and shredded cheese until evenly distributed.
  7. Fill muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
