Tennessee Peach Pudding

Ingredients:

Accompaniement:

3/4 cup dark brown sugar

3/4 cup granulated sugar

3 tablespoons salted butter

3 cups of water

1/2 teaspoon nutmeg

Filling:

5 cups fresh peaches, peeled and diced

2 cups all-purpose flour

1/2 cup granulated sugar

1/2 cup dark brown sugar

4 teaspoons baking powder

1 teaspoon of salt

2 teaspoons apple pie spice

1 cup whole milk

1 teaspoon vanilla extract

Instructions:

Preheat oven to 400º F. Lightly grease a 9 × 13 inch baking dish and set aside.

Prepare the filling:

In a large saucepan over medium heat, combine all the filling ingredients. Bring to a boil, stirring, until the sugar is completely dissolved.

Remove from heat and set aside.

In a large bowl, stir together flour, granulated sugar, brown sugar, baking powder, salt, cinnamon and apple pie spice until well blended. Whisk milk and vanilla extract until smooth. Stir in the diced peaches.

Pour the filling into the prepared baking dish. Pour the filling on top.

Bake in preheated oven for 55-65 minutes until set. Cover with foil if top gets too dark before baking.

Remove from oven and let stand 15 minutes before serving.
